Light of Day Green was a delight to discover. Fresh aroma, pleasant mouth feel, intriguing vegetal note that lasted through three infusions. This leaf is made up of the prized pluck, two leaves and a bud, and the care lavished on this tea in picking and processing comes through in the flavor. I used 4 grams of dry tea in 16 oz of water to make two cups of tea. (You have to share) I started with slightly cooler water for my first meeting with this tea, 160-degree F. I didn't know the tea and didn't want to stew a tender leaf with water that's too hot. Second and third infusions received increases in temperature finishing at 175-degrees F. I infused the first pot for 30-40 seconds and just smiled as the character of the tea revealed itself.
