As we prepare this week for our December re-opening, we’re reminded of the gift of your support throughout Light of Day's 21 years in business today. Today is our 21st birthday!  We were founded on December 3, 2003. Thank you so much for your loyalty and for sharing the news with others about this unique and special business; this ministry of tea & goodwill. 

May you and your family enjoy this holiday season and may it be filled with radiantly good health and vitality, good friends to enjoy tea with,  hope, and the gift of deep, abiding peace. 
 
It is always so much fun being in the the shop!  Many customers walk in, take a deep breath and grin ear to ear when smelling the wonderful aroma that exists in our shop.  After a warm "Welcome!", our first question as customers enter is “Is this your first time to the farm?”  For some it is… but for others it feels like a homecoming of sorts. We love this! It was at your urging that we made the decision to reopen the store last May and it has been such a pleasure to serve you.  We absolutely love seeing old friends again, making new friends and providing the space to sniff, taste, and explore our one of a kind teas.
 
We truly enjoy hearing stories about your favorite teas and learning about the unique ways you enjoy our products. Last December, a customer shared that she uses our Creamy Earl Grey tea when she makes shortbread cookies. Many years ago, she found a recipe in the Detroit Free Press 
and uses it every year to make goodies for her friends and family. We asked her if she would be willing to share the recipe and she did; here it is, slightly modified. Enjoy!
 

 
Our beautiful, fragrant & award-winning bestseller: Creamy Earl Grey!
Light of Day Organic's Creamy Earl Grey Shortbread Cookies            

Makes 2 dozen cookies: Preparation time 15 minutes/ Total time 30 minutes
1 cup (2 sticks) unsalted butter softened
½ cup powdered sugar
2 cups of  All-purpose wheat flour or Gluten-free flour substitute
1/2 tsp salt
1 rounded teaspoon of our Creamy Earl Grey Tea (use more tea for a stronger flavor)
Preheat oven to 350 degrees. Line two cookie sheets with parchment paper.
In a large bowl or mixer, cream together the butter and powdered sugar.
Add in flour and salt and crushed up tea leaves, continue to mix until a soft dough forms, mix will be dry and crumbly at first but will come together.
Roll out dough onto a lightly floured board until its ¼ inch thick. Cut out cookies using a 2 inch round cookie cutter.
Bake on parchment lined cookie sheets for 20-22 minutes or until edges are golden brown. Remove from oven. Cool for 1 minute on baking sheet and transfer to wire rack to cool completely.
