Matcha is the oldest variety of shade grown Green Tea (shade grown to keep plant’s energies focused on the foliage, rather than on producing buds) that has been deveined, destemmed, blanched, dried at low temperatures, then stone ground into a fine powder within oxygen-free chambers to prevent oxidation. It is bagged up or put into tins, then flash frozen to preserve and protect the properties of Matcha. We keep our Matcha products (Matcha powder and Matcha capsules) at a controlled temperature to preserve potency, and encourage you to store yours in the refrigerator once you receive and take into your home. Historically, it has been an important part of Zen Buddhist culture for over 800 years and is considered the “drink of the Samurai“. Unlike regular Teas where the most nutritious Tea leaves are thrown away along with the Tea bag after infusion, Matcha green Tea is mixed with water (or mixed into a smoothie) and the tea leaf is consumed entirely. Thus, by virtue of “eating” the Tea leaves (solubles and insolubles) rather than just drinking the water from it, one consumes 10 to 15 times the nutrients found in regular green Teas.
